Mix until pale and doubled in size, 5 minutes, speed 3.
Heat until thickened, 5 minutes, 85°C, speed Min.
Heat for 2 minutes, 85°C, speed 1.
While the machine is running, slowly pour Marsala wine into the Appliance bowl.
Heat for 2 minutes, 85°C, speed 2.
Cook until thickened and creamy for 10 minutes, 85°C, speed Stir 1.
Let cool for 5 minutes.
