Meringue Kisses

Ingredients

2  egg whites
125 g caster sugar
  red gel paste, as needed, optional


Instructions

STEP 1/3

Preheat the oven to 110ºC.
Line the baking tray with parchment paper.
Fit the Whisk Tool.
Add egg whites into the 5L Appliance bowl.
Mix until medium peaks form for 2 minutes 30 seconds, speed Max.
While the machine is running, gradually add caster sugar into the 5L Appliance bowl.
Mix for 5 min 30 seconds, speed Max.
Or use the Egg White Whisking preset if applicable and adjust the time to 8 minutes.

STEP 2/3

Fit the piping bag with an open star piping tip.
Dip a medium size paintbrush in red gel paste.
Use the paintbrush to paint three stripes up the sides of the piping bag to create stripped meringue kisses (optional).

STEP 3/3

Transfer the meringue from the Mixer bowl into the piping bag.
Pipe meringue onto the prepared baking tray, with even gaps between them.
Bake until the meringue comes cleanly away from the parchment paper for 2 hours, 110ºC.
Remove from the oven and let cool completely.

 

Serve


If you want to add stripes of red food colouring to give them a candy cane effect you simply use a medium paintbrush to paint three stripes of colour inside the piping bag – ensure you use bake stable gel paste food colours.
