Apple Sorbet with Toffee Apple Slices

This a delicious summer treat. Make the sorbet the day before the toffee apple slices to allow it to set. Serve the sorbet with the apple slices on top.

Ingredients

750 grams Granny Smith apples
1  lemon
250 grams water
375 grams golden caster sugar


1  granny smith apple
1  lemon


200 grams golden caster sugar
50 grams water
2  golden syrup
0.5  white wine vinegar


2  sesame seeds
1 tsp. ground cinnamon


Instructions

STEP 1/6

Peel, core and chop the apples from Ingredients 1.

Juice the lemon.

Halve the apple in Ingredients 2 lengthways and then slice thick crescent slices.

Juice the lemon.

STEP 2/6

Line a baking sheet with parchment paper.

Lift the Cooking Chef head and fit the heat shield.

Fit the Stir tool and assist clip to the machine.

STEP 3/6

Attach the Mixer bowl to the machine.

Add Ingredients 1 (apple, lemon juice, water, sugar) into the Mixer bowl, fit the splash guard.

Cook at 104ºC, on speed Stir 3 for about 10 minutes or until soft.

Leave the apples to cool.

Transfer the apples to the blender jug.

Fit the blender attachment to the machine.

Blend until completely smooth.

Pour the mixture into a plastic tray and cover.

Freeze until set.

STEP 4/6

Coat the first of Ingredients 2 (apple slices) with the rest of Ingredients 2 (lemon juice).

Place a sheet of kitchen towel onto a plate.

Place the apple slices onto the plate.

Cover with another sheet of kitchen towel.

Leave to dry.

STEP 5/6

Retrieve, clean the Mixer bowl and fit the Stir Tool.

Add the first 2 of Ingredients 3 (sugar, water) into the Mixer bowl.

Attach the Mixer bowl to the machine.

Cook at 60ºC on speed 4 for about 5 minutes.

Add the last of Ingredients 3 (syrup, vinegar) into the bowl.

Cook at 150°C on speed 6 for about 20 minutes or until a dark caramel colour is reached.

STEP 6/6

Sprinkle Ingredients 4 (seeds, cinnamon) onto the baking tray.

Take each of the apple slices and dip halfway into the caramel.

Place the apple slices onto the baking tray.

Let set.
