Tofu Skewers

Fire up the grill this summer and make these simple but delicious grilled tofu skewers with mixed vegetables. These can be grilled on a BBQ or griddle for a smoky flavour. If you are using wooden skewers, soak them in water for 10 minutes to prevent them from burning.

  1. Fit the Knife Blade to the Food Processor attachment
  2. Add red chili, garlic clove, ginger, soy sauce, light brown sugar, salt and black pepper to the Food processor attachment
  3. Blitz until smooth
  4. Transfer mixture to medium bowl
  5. Add tofu to the medium bowl
  6. Mix until coated
  7. Cover with plastic wrap
  8. Refrigerate in fridge - 30 min
  9. Remove the bowl from the fridge
  10. Add tofu to skewer
  11. Add zucchini, red onion, yellow bell pepper and cherry tomatoes to the skewer
  12. Pre-heat a clean griddle pan - high heat
  13. Place the skewers onto the hot griddle pan
  14. Cook each side - 3 min, high heat
  15. Serve
