Ingredients

Pavlova

  • 3 large egg whites
  • 150g caster sugar
  • ½ tsp white wine vinegar
  • ½ tsp cornflour
  • Dash vanilla essence

Filling

  • 250ml cream
  • 1 tbsp icing sugar
  • Dash vanilla essence
  • 150g blueberries
  • 150g raspberries
  • 250g strawberries
  • Mint to garnish

Method

  • Preheat your oven to 140C/120C fan and line a tray with parchment paper.
  • Fit your Kenwood kMix stand mixer with the whisk attachment.
  • Whisk the egg whites until frothy and gradually add in the caster sugar.
  • Mix on full speed until thick and glossy.
  • To this add the cornflour, white wine vinegar and vanilla. Mix to combine.
  • Place the meringue into a piping bag and pipe a Christmas tree design on the baking tray.
  • Place in the preheated oven and bake for one hour.
  • Once baked, turn the oven off and allow to cool inside.
  • Add the cream, vanilla and sugar to the bowl of your Kenwood kMix and whisk until thick
  • Spoon this cream over the top of the cooled pavlova tree and top with mixed berries or your chosen fruit.
