Leche frita is a delicious Spanish dessert which can be eaten hot, warm or cold. Sprinkle with a mixture of sugar and cinnamon and serve with ice cream.
Ingredients
80g Unsalted Butter
280g All Purpose Flour
600ml Milk
80g Caster Sugar
½ teaspoon Ground Cinnamon
½ Lemon
2 Eggs
Sunflower Oil as needed

Square pan - 9"
Method
Fit whisk tool to kCook bowl
Add unsalted butter to the kCook bowl
Fit kCook bowl to kCook Multi
Attach lid to kCook bowl with filler cap fitted
Cook with filler cap fitted - 1 min 15 sec, 80°C
Then add all purpose flour to the kCook bowl
Cook with filler cap fitted - 5 min, 110°C, speed 6
Then add milk, caster sugar, ground cinnamon and lemon to the kCook bowl
Cook with filler cap removed - 15 min, 98°C, speed 6
Transfer content of kCook bowl to square pan
Freeze - approx 2 hr
Transfer content of square pan to work surface
Cut into squares
Roll in all purpose flour, egg and all purpose flour one by one
