Carbonnade - Flemish Beef Stew

A rich stew which gets it deep flavours from the dark beer and caramelised onions. Carbonnade (a Flemish Beef Stew) should be served with some steamed root vegetables.

  1. Fit thick slicing disc (5) to direct prep attachment
  2. Fit direct prep attachment to kCook Multi
  3. Add stewing steak, beer, garlic clove and bay leaves to a clean medium bowl
  4. Marinate in fridge - 2 hr
  5. Fit stir tool to kCook bowl
  6. Add olive oil to the kCook bowl
  7. Fit kCook bowl to kCook Multi
  8. Attach lid to kCook bowl
  9. Heat with filler cap removed - 140°C, speed 3
  10. Transfer beef to kCook bowl
  11. Add bacon to the kCook bowl
  12. Cook with filler cap removed - 2 min, 140°C, speed 4
  13. Cook with filler cap removed - 3 min, 120°C, speed 3
  14. Turn direct prep attachment to position 1
  15. Slice onion into the kCook bowl with direct prep attachment
  16. Turn direct prep attachment to position 2
  17. Add sugar to the kCook bowl
  18. Season
  19. Cook with filler cap removed - 10 min, 140°C, speed 1
  20. Then add beef stock, wholegrain mustard, fresh thyme and fresh parsley to the kCook bowl
  21. Cook with filler cap fitted - 2 hr, 98°C, speed 1
  22. Season to taste
  23. Serve
