Vegan Banana Bread
A great way to use ripened bananas, you can experiment with flavour combinations by adding peanut butter, dried fruit and nuts.

Butter | 140 grams |
Caster sugar | 140 grams |
Ingredients 3 | |
Eggs | 2 beaten |
Ingredients 4 | |
Plain flour | 140 grams |
Baking powder | 2 tsp. |
Prep. (Before you begin)
1 - Peel the bananas.
2 - Cut the butter into cubes and leave at room temperature to soften.
Getting started
1 - Fit the K beater to the machine.
2 - Pre heat the oven to 180ºC.
3 - Line the loaf tin with parchment paper.
Stage 1
1 - Add Ingredients 1 (bananas) into the Mixer bowl.
2 - Attach the Mixer bowl to the machine and fit the splash guard.
3 - Mix on speed 3 for 1 minute.
Stage 2
1 - Add Ingredients 2 (butter, sugar) into the Mixer bowl.
2 - Mix on speed 3 for 2 minutes.
Stage 3
1 - Add Ingredients 3 (eggs) into the Mixer bowl.
2 - Mix on speed 3 for 1 minute.
Stage 4
1 - Add Ingredients 4 (flour, baking powder) into the Mixer bowl.
2 - Mix on speed 1 for 2 minutes
3 - Transfer the contents of the Mixer bowl to the loaf tin.
4 - Bake for 30 minutes at 180ºC or until a skewer tests clean.
5 - Leave to cool for about 10 minutes.
6 - Turn out onto a wire rack.
7 - Serve.
